Omega 3 Eggs - Scrumptiously Fit Food


For a long time eggs were thought to be the root of all evil, causing high cholesterol and loaded with fat, a healthy diet nightmare! We were told to only eat egg whites for protein and to throw out the egg yolks, when in fact many nutrients fom the egg comes from the yolk itself. Instead, try to find omega-3 eggs which are loaded with healthy omega-3 fats that can only benefit us if we ingest the yolk. Recent research have shown less of a link between individuals with high cholesterol and eating eggs on a daily basis compared to individuals who enjoyed eating high trans fat and saturated fat foods. These fats causes an increase of Low Density Lipoprotein (LDL) cholesterol, also known as the bad cholesterol, to build up in your blood stream, which can lead to heart complications. Polyunsaturated and monounsaturated fats on the other hand could potentially lower bad LDL cholesterol by increasing good High Density Lipoprotein (HDL) cholesterol. Since heart healthy omega-3s are considered polyunsaturated fats and can be found in eggs we should definitely not remove them from our diets! I've included a simple nutritious egg recipe below, but just remember although eggs are good for us, with all foods, moderation is key!

Spicy scrambled egg wraps
Servings: 2

Ingredients:
Canola oil
3 omega-3 eggs
1/2 cup of red or green peppers chopped
1/4 cup onion chopped
1 cup lettuce thinly sliced
1 tsp dried chili flakes
salt
pepper
1/4 cup low-fat mozarella cheese
4 tbsps salsa
2 8" whole wheat tortillas

Preparation:
Warm up pan on medium heat, put in the canola oil and stir in onions. Once onions turns a golden yellow, stir in peppers. In the meantime, whisk eggs with hot chili flakes, salt and pepper. Pour eggs over mixture in pan and stir until eggs are cooked and scrambled. Take off heat.

Place egg mixture in tortillas, add cheese, lettuce and salsa. Wrap and enjoy!
