Banana Bread and Global TV


I can’t believe it’s going to be 9 years on the blog soon! Looking back there has been so many amazing things that have happened in my life. I got married, moved to a new house, had two kids and visited spectacular places around the world making unforgettable memories with loved ones. And because of the blog I’ve had fantastic food related experiences as well.

I’ve had the opportunity to appear on radio, print and even made a commercial with Chevrolet! I am extremely grateful for every one of those experiences and recently I had the honor of appearing on Global TV to talk about a wonderful banana bread recipe that I wanted to also share on here with everyone.

Going back a bit to my roots I’ve also included a few nutritional tidbits as well as ingredient substitutions and for the first time on the blog you can watch the recipe in action below. Nutritional Tidbit: There are quite a few people I know that are allergic to eggs and therefore can’t enjoy baked goods. Instead of avoiding them you can use what is called a Flax Egg instead where you combine 1 tbsp of ground flaxseed and 3 tbsp of water. Mix them together and set it aside until it becomes gelatinous and use that in substitute of one egg. The use of a flax egg would also up the fibre content of your recipe. If you’re planning on using this, don’t substitute other ingredients to ensure the integrity of the recipe remains intact.



Ingredients:

1 1/2 cups All Purpose Flour (or you can use half and half whole wheat and all purpose flour for increased fibre content)
3/4 cups Sugar
1 tsp Baking Soda
Optional: 1 tsp Cinnamon
Optional: Pinch of Salt (if not using salted butter)
3 ripe Bananas
2 Eggs
1/2 cup melted Butter
1 tsp Vanilla Extract

Preparation:

Preheat oven to 350. Grease a 9” loaf pan.

In a small mixing bowl, combine flour, sugar, baking soda, cinnamon and salt (if using). Set aside.

In a medium mixing bowl, mash bananas until there are no more lumps. Add in eggs, melted butter and vanilla extract.

Add flour mixture in to the wet mixture. Make sure the wet and dry ingredients are well mixed together.

Pour batter into the 9” loaf pan and bake in oven for 50 minutes or until a toothpick inserted comes out clean.

Remove from loaf pan and allow to cool. Enjoy!
